Bauer Winery

Founded in 2012, Bauer Winery is located in Dragasani, Jud. Valcea, in the heart of Dragasani Vineyard.

The new winery is designed to allow the vinification of small quantities of grapes, from rare varieties or varieties not yet discovered by wine lovers, picked from old, well-kept plots.

The winery’s oenologist, Oliver Bauer, of German origin, came to Romania for the first time in 2003, when he was given a great opportunity to contribute to the revival of the Stirbey winery tradition.

He had the opportunity to get to know, to vinify and to understand the Romanian varieties, such as Cramposie, Tamaioasa Romanesca, Novac, Negru de Dragasani.

Seeing the great potential of Romanian viticulture, especially by highlighting varieties cultivated for hundreds, even thousands of years in Romania, he decided to start his own business, as an extension of his activity.

At his 10th harvest in Romania, Oliver chose 3 varieties to be part of the Bauer portfolio – Sauvignonasse, Sauvignon Blanc and Cramoposie selectionata.
Character and authenticity – these are realities and values we believe in. In all aspects of winemaking and vine cultivation we strive to create perfect conditions so that our wines speak distinctly and convincingly.

Balance, sustainability and an understanding of the connection with nature are the most important aspects for us. In this way we manage to reduce the influence of technique to a reasonable minimum.

Our goal is to rediscover and show the amazing potential of Romanian varieties and unique terroir. For us, the true art of winemaking lies in understanding the personality of each variety and respecting its specific needs and expressions. Our aim is to do what is needed, at the right time and to the right extent.

The “Natural Creativity” philosophy is also a mirror of our belief in diversity and not in the concept of “the best wine”
